I'm not a fan of lollies and we try to avoid them where we can, but I'll happily have these healthy gut loving Blueberry and Coconut Gummies in the fridge anytime. Made of gelatin, these gummies not only taste yummy, they're also nourishing. Gelatin has a range of health benefits from improving the lining of the digestive tract and protecting the skin from free radical damage, to helping to maintain strong bones and ease symptoms of joint pain

Homemade gummies are easy to make and very versatile. These Blueberry and Coconut Gummies contain just 4 ingredients, are refined sugar-free, kid-friendly and take minutes to make. If you don't have blueberries, swap them for mixed berries. If your child prefers their gummies to be a little sweeter, simply add a little honey. 

You can even boost the nutrient content of these Blueberry and Coconut Gummies by adding probiotics. If you are going to add a probiotic powder to the mix, make sure it has cooled slightly before doing so. Now to the gelatin. There are lots of gelatin products out there, but I personally choose to use Great Lakes Gelatin Powder or I Quit Sugar Gut Lovin' Gelatin. Depending on how hard or jelly-like you prefer your gummies, you may want to add or reduce the mix by 1/2 a tablespoon.

Blueberry + Coconut Gummies

muffins

Prep time: 10 mins

Setting time: 2-3 hrs

Makes: approx. 20 gummies


Ingredients:

  • 3.5 tbsp grass-fed gelatin powder (unflavoured)
  • 1/3 cup water
  • 1 1/2 cups of blueberries (I use frozen)
  • 1/2 cup coconut cream
  • optional - honey

Instructions:

  1. In a small bowl, mix the water and gelatin powder. Set aside for 5 minutes and allow to bloom.
  2. Place the blueberries and coconut in a saucepan over low-medium heat. Stir regularly, allow mix to warm and for the blueberries to soften. Take off the heat.
  3. Break up the bloomed gelatin and add to the warm berry mixture. Stir until the gelatin has dissolved. With a stick blender, blend the mixture until smooth.
  4. Pour into a silicon moulds or an oiled baking dish. Pop into the fridge until the gummies have hardened.

Note:

Honey or any other sweetner is not advised for children under 2 years old.
